Lentil salad
Ingredients:
- 400g canned cooked brown lentils, rinsed and drained
- ½ red onion, sliced
- 1 clove garlic clove, crushed
- 1 bunch English spinach, roughly chopped
- 150g goats cheese, roughly chopped
- 1 cup cherry tomatoes
Dressing:
- juice of ½ a lemon
- 1 tablespoon of olive oil
- 1 teaspoon of Dijon mustard
Method:
- Combine lentils, red onion, spinach and Goats cheese in a medium sized mixing bowl
- In a smaller bowl, combine dressing ingredients and mix well
- Add cherry tomatoes and dressing to salad mix
- Mix well and serve.
