Lentil salad

Serves: 1 (150g)

  • 400g canned cooked brown lentils, rinsed and drained
  • ½ red onion, sliced
  • 1 clove garlic clove, crushed
  • 1 bunch English spinach, roughly chopped
  • 150g goats cheese, roughly chopped
  • 1 cup cherry tomatoes


  • juice of ½ a lemon
  • 1 tablespoon of olive oil
  • 1 teaspoon of Dijon mustard


  1. Combine lentils, red onion, spinach and Goats cheese in a medium sized mixing bowl
  2. In a smaller bowl, combine dressing ingredients and mix well
  3. Add cherry tomatoes and dressing to salad mix
  4. Mix well and serve.
