Banana oatmeal pancakes
Ingredients:
- 2 ripe bananas
- 2 eggs
- 1/2 cup milk
- 1 tsp vanilla extract
- 1 1/2 cups rolled oats
- 2 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp salt
Method:
- Blend oats first. Then add all other ingredients and blend until completely smooth.
- Add a drizzle of olive oil to a pan and spoon on pancake mixture. Flip pancakes when bubbles form.
- Cook until golden on the underside and then plate up.
- Serve with your favourite fruity toppings, we love Greek yoghurt and strawberries!
