Hot wheels
Ingredients:
- 6 medium sized potatoes
- 1 tablespoon olive oil
Method:
- Preheat oven to 200°C
- Slice potatoes 5mm thick
- Place on baking tray and brush with olive oil
- Sprinkle with choice of topping
- Cover and bake for 15 minutes at 200°C
- Uncover and bake for 10 minutes until crisp and brown.
Topping suggestions:
- ½ cup finely chopped red capsicum
- 1 cup reduced fat cheese, grated
- 3 finely chopped tomatoes
- 50g shredded chicken
- ½ teaspoon basil
- ½ teaspoon rosemary.
