Impossible quiche
Ingredients:
- 5 eggs
- 470ml reduced fat milk
- 200g reduced fat cheese, grated
- 1 onion, finely chopped
- ½ cup mixed vegetables of choice*
- 80g diced tomato
- ½ cup self raising flour
*tip: grated zucchini and carrot work really well in this recipe
Method:
- Preheat oven to 200°C. Grease a large baking dish or line with baking paper
- Combine eggs and milk in a jug or large bowl, whisk until well combined
- Combine cheese, onion, tomato, vegetables and flour in a separate bowl
- Stir until all ingredients have been coated in flour
- Pour egg mixture over flour mixture and stir until combined
- Pour into prepared dish, bake for 30-40 minutes.
