Mini philly frittatas
Ingredients:
- 250g softened light cream cheese
- 1 small red onion, finely chopped
- 80g baby spinach leaves, finely chopped
- 60g cooked shredded chicken breast
- 2 tablespoons plain flour
- 1/2 cup diced capsicum (any colour)
- 2 eggs, beaten
- 5 sliced fresh tomatoes
- 1 tablespoon parmesan cheese
Method:
- Preheat oven to 180°C
- Combine cream cheese, capsicum, onion, tomatoes, spinach, chicken and flour in a bowl, mix well
- In a separate bowl beat the eggs
- Add eggs to cream cheese mixture
- Spoon into a non-stick muffin pan
- Top each muffin with a light sprinkle of parmesan cheese
- Bake for approximately 20-25 minutes or until set.
