Banana and Blueberry pancakes
Ingredients:
- 3 ripe bananas
- 3 eggs
- 4 tablespoons yoghurt
- 6 tablespoons wholemeal self-raising flour
- half a punnet of blueberries
Method:
- Peel and mash bananas in bowl
- Add eggs and whisk. Followed by yoghurt and whisk again
- Add flour and mix in, then add blueberries and stir to combine
- Cook on fry pan for 2-3 minutes each side
- Top with yoghurt and extra blueberries!
