Tuna and avocado melts

Ingredients:

  • 6 Turkish rolls, split through the centre
  • 2 x 425g cans tuna in spring water, drained and flaked
  • 3 spring onions, finely sliced
  • 4 tomatoes, diced
  • Pinch chilli flakes (optional)
  • 1/3 cup reduced fat mayonnaise
  • 2 large avocados, thinly sliced
  • 2 cups shredded reduced fat cheese

Method:

  1. Preheat grill, line a baking tray with grease proof paper
  2. Place Turkish bread cut side down under grill for one minute or until lightly toasted
  3. Place tuna, spring onions, tomato, chilli and mayonnaise in a bowl, mix gently
  4. Remove bread from grill, turn over, top with avocado slices
  5. Spoon tuna mixture over avocado, sprinkle with shredded cheese
  6. Grill for an additional 5 minutes or until cheese has melted and golden
  7. Serve on a paper napkin.
