Tuna and avocado melts
Ingredients:
- 6 Turkish rolls, split through the centre
- 2 x 425g cans tuna in spring water, drained and flaked
- 3 spring onions, finely sliced
- 4 tomatoes, diced
- Pinch chilli flakes (optional)
- 1/3 cup reduced fat mayonnaise
- 2 large avocados, thinly sliced
- 2 cups shredded reduced fat cheese
Method:
- Preheat grill, line a baking tray with grease proof paper
- Place Turkish bread cut side down under grill for one minute or until lightly toasted
- Place tuna, spring onions, tomato, chilli and mayonnaise in a bowl, mix gently
- Remove bread from grill, turn over, top with avocado slices
- Spoon tuna mixture over avocado, sprinkle with shredded cheese
- Grill for an additional 5 minutes or until cheese has melted and golden
- Serve on a paper napkin.
